Spring risotto

Preparation time : 10 minutes 
Cooking time : 40 minutes

Ingredients (for 4 persons)

30 g butter
1 finely chopped onion
400 g arborio rice (rice suitable for risotto)
100 g peas
100 g string beans
1 bush of parsley, finely chopped
12 cl white wine (Vasto Chardonnay)
1,5 l vegetable stock
100 g grated Parmesan cheese
Salt and pepper

Melt the butter in a frying pan over high heat and fry the onion. Then add the rice and stir until it is translucent. Add the vegetables, parsley and white wine. Let it boil for 2-3 minutes. Thena add te stock ladle by lable. Wait betwee each ladle until the stock has been absorbed by the rice. Finally add the Parmesan cheese (and if you like some cream) and season to taste with salt and pepper.

Decorate the dish with some Parmesan cheese and parsley. Serve hot.

We recommend you serve this dish with a glass of Vasto Chardonnay.
